No thought required breakfast for a week

 "Slab" Frittata (adapted from Smitten Kitchen Every Day)

Ingredients:

  •  6 eggs
  • 2-2.5 ounces arugula (could also use spinach or other greens, cooks down to about 1/2 cup)
  • 4 ounces meat (ham sausage, etc)
  • 1/2 small yellow onion, finely chopped
  • 1 garlic clove, minced
  • 8 oz white mushrooms (sliced)
  • 2 tbs milk (I used whole milk)
  • 1 tsp kosher salt
  • ground black pepper
  • 3 oz gruyere or similar melty cheese.

Instructions:

  1. Saute arugula until wilted in 1 tsp oil and 1 tbs water - set aside
  2. saute onion for 5 minutes on medum high
  3. add mushrooms and a bit of salt and saute on medum high for 5 min
  4. add garlic and saute until fragrant, take off heat
  5. Whisk egg with salt, pepper and nutmeg  until mixed, add the rest of the ingredients
  6. Pour into 9*13 cake pan sprayed with pam
  7. sprinkle cheese on top
  8. Bake for 20-25 minutes
  9. Cut into 6 squares, store w/ parchment paper to separate
